Cooking with Kids: Zucchini and Goat Cheese Quiche

Cooking with kids Enzo zucchiniIf you follow my Instagram account you may have noticed that I really love cooking with my son. I think cooking with kids is a great way to 1. Spend time with our kids (especially if we are working parents) 2. Help practice vocabulary in other languages 3. Pass along culture and heritage through food. When kids are in the kitchen, they learn to love the food they cook, and they are more likely to try the foods they cook. Cooking with kids will help create healthy eating habits.

So cooking is a way for us to enforce our son’s love for the food of his heritage and being half-French, quiches are a must.

Quiches are a very popular dish in France. When I lived there I thought they were very hard to make just because they were so exquisite. I remember once I held an end-of-year picnic with my high school students and there were a lot of quiches. That was the first sign that a quiche couldn’t be so hard to make!

I discovered that they are actually not hard to make at all! There are not a lot of ingredients, and the work in the kitchen is basic- rolling out the dough, whisking, peeling the veggies, etc.

Here is the quiche we made a few weeks ago, perfect for #MeatlessMonday! It is a zucchini and goat cheese quiche. Bon Appétit! 

Zucchini and goat cheese quiche

Ingredients:ingredients quiche zucchini

1 pie crust

2-3 zucchinis

extra virgin olive oil

goat cheese

16 ounces (1 pint) of heavy cream

5 eggs

 

 

I’ve created an easy step-by-step recipe to follow… please note, I’m not a chef (at all) and my goal is really to make cooking fun and easy so you can do it with your kids! This is the way I thought about sharing this recipe with you!

Quiche roll out the dough

1. Roll out the dough on parchment paper and set aside. Preheat the oven to 375 degrees.

2. Peel and cut the zucchini in thin equal pieces (1/2 inch). Please note: Children should not use sharp kitchen utensils unsupervised! My son was supervised while doing this, and he has learned how to use these utensils.

3. Cook the zucchini in extra virgin olive oil, and cook at medium heat. When cooked add to the pie crust as pictured above.

4. Add the heavy cream and eggs and whisk.

5. Pour the heavy cream and egg mixture into the pie crust (with zucchini) and add piece of goat cheese.

6. Put in the oven for 30-35 depending on your oven. It should be golden as above. Stick a knife in it, if it is clean when you take it out, it is ready.

You can eat it with a nice green salad on the side.

  1. How cool! I love quiches but I don’t think my kiddos would eat it 🙁 Even Adrian that loves veggies only eats them raw. Oh well, yo cocino con ellos otra cositas! Saluditos roomie!
